Creamy Peanut Miso Udon Recipe

- 1 large shallot, thinly sliced (or 1/2 small onion)
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 red bell pepper, thinly sliced
- 1 cup sliced mushrooms (cremini or shiitake)
- 4 oz fresh or frozen udon noodles (2 servings)
- 1/2 cup creamy peanut butter
- 2 tbsp white miso paste
- 2 tbsp soy sauce (or tamari for gluten-free)
- 1 tbsp rice vinegar
- 1 tbsp brown sugar or maple syrup
- 1/2 tsp red pepper flakes (or more, to taste)
- 1 cup vegetable broth
- 1/2 cup full-fat coconut milk (canned)
- 1/4 cup chopped fresh cilantro, for garnish
- 2 tbsp chopped roasted peanuts, for garnish
- Lime wedges, for serving.
How to Make This.
Stovetop Method:
- Cook Udon: Cook udon noodles according to package directions. Drain, rinse with cold water to prevent sticking, and set aside.
- Sauté Aromatics: Heat sesame oil in a large skillet or wok over medium heat. Add sliced shallot and cook until softened, about 2-3 minutes. Add minced garlic and grated ginger, and cook for another minute until fragrant.
- Add Vegetables: Add sliced red bell pepper and mushrooms to the skillet. Sauté for 5-7 minutes until vegetables are tender-crisp.
- Prepare Sauce: In a medium bowl, whisk together peanut butter, miso paste, soy sauce, rice vinegar, brown sugar (or maple syrup), red pepper flakes, vegetable broth, and coconut milk until smooth and well combined.
- Combine & Simmer: Pour the sauce into the skillet with the vegetables. Bring to a gentle simmer, stirring constantly, until the sauce thickens slightly, about 3-5 minutes. Taste and adjust seasonings as needed.
- Add Udon: Add the cooked udon noodles to the skillet and toss gently to coat them evenly with the creamy sauce. Cook for 1-2 minutes, just until the noodles are heated through.
- Serve: Divide the udon into bowls. Garnish generously with fresh cilantro, roasted chopped peanuts, and chili oil (optional). Serve immediately with lime wedges on the side.
