Brown Sugar & Pear Galette Recipe

Ingredients.
- 1 sheet of puff pastry (or homemade shortcrust)
- 3-4 ripe but firm pears (like Bosc or Anjou)
- 3 tablespoons brown sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- 1 tablespoon lemon juice
- 1 egg (for egg wash)
- 2 tablespoons apricot jam (for glazing)
How to Make This.
- Prep Pears: Peel, core, and thinly slice the pears. Toss them in a bowl with the brown sugar, cinnamon, ginger, and lemon juice.
- Roll Out Pastry: On a piece of parchment paper, roll out your pastry into a rough circle (about 12 inches).
- Assemble: Arrange the pear slices in the center of the pastry, leaving a 2-inch border all around. You can fan them out or just pile them up rustically.
- Fold: Gently fold the edges of the pastry over the pears, pleating it as you go. The center should remain open.
- Chill: Place the galette (on its parchment) in the fridge for 15 minutes. This helps the pastry stay flaky.
- Bake: Preheat oven to 200°C (400°F). Brush the pastry edges with beaten egg. Bake for 25-30 minutes until the pastry is deep golden and the pears are tender.
- Glaze: While warm, melt the apricot jam with a splash of water and brush it over the pears for a professional shine.
Tips.
- Pear Ripeness: Use pears that are ripe but still hold their shape. If they are too soft, they will turn to mush in the oven.
- Cold Pastry: Always keep your pastry cold. If it gets too soft while you’re working, put it back in the fridge.
