Chocolate Rye Cookies Recipe.
(Deeply fudgy, slightly earthy, and perfectly salted.)
A cookie that tastes like a dark chocolate dream.
Ingredients.
- 100g rye flour
- 25g unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon salt
- 150g dark chocolate (70% cocoa), melted
- 60g unsalted butter, melted
- 2 large eggs
- 150g brown sugar
- 1 teaspoon vanilla extract
- Flaky sea salt (for finishing)
How to Make This.
- Melt Chocolate and Butter: Melt the dark chocolate and butter together in a heatproof bowl over a pan of simmering water (or in the microwave in 30-second bursts). Let it cool slightly.
- Whisk Eggs and Sugar: In a large bowl, whisk the eggs and brown sugar together for at least 5 minutes until the mixture is very pale and doubled in volume. This creates the “cracked” top.
- Combine: Whisk the melted chocolate mixture and vanilla into the egg mixture.
- Add Dry Ingredients: Sift in the rye flour, cocoa powder, baking powder, and salt. Fold gently until just combined. The batter will be quite soft.
- Chill: Refrigerate the batter for 30 minutes to firm up.
- Bake: Preheat oven to 180°C (350°F). Scoop rounded tablespoons of batter onto a parchment-lined sheet.
- Finish: Bake for 10-12 minutes until the edges are set and the tops are beautifully cracked. Sprinkle with flaky sea salt immediately.
Tips.
- Whisking is Key: Don’t skimp on the 5-minute egg and sugar whisking; it’s what gives the cookies their signature shiny, cracked surface.
- Rye Flour: Rye flour has less gluten than wheat, which contributes to the incredibly soft, fudgy texture.
- Don’t Overbake: These cookies should still feel a bit soft when you take them out; they will firm up as they cool.
Why Make This?
These cookies are often called “brownie cookies” because of their intense chocolate flavor and fudgy center. The rye flour adds a layer of complexity that you just don’t get with all-purpose flour, making them feel like a truly artisanal treat.
SERVING SUGGESTIONS.
- Serve with a glass of cold milk or a rich red wine.
- Pair with a scoop of salted caramel ice cream.
- These are quite rich, so one or two is usually enough to satisfy a chocolate craving.
- They keep well in an airtight container for up to 3 days.
