  2. Prep: Preheat oven to 160°C (325°F). Grease and line a 2lb loaf pan with parchment paper.
  3. Mix: In a large bowl, combine the flour, sugar, ginger, and orange zest.
  4. Combine: Pour the soaked fruit and any remaining liquid into the dry ingredients. Add the beaten egg and stir until well combined.
  5. Bake: Pour the batter into the prepared pan. Bake for 60-75 minutes, or until a skewer inserted into the center comes out clean.
  6. Cool: Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack.
  7. Wait: For the best flavor and texture, wrap the cooled loaf in foil and wait 24 hours before slicing.
