  • 1 tablespoon lemon juice
  • 1 egg (for egg wash)
  • 2 tablespoons apricot jam (for glazing)

How to Make This.

  1. Prep Pears: Peel, core, and thinly slice the pears. Toss them in a bowl with the brown sugar, cinnamon, ginger, and lemon juice.
  2. Roll Out Pastry: On a piece of parchment paper, roll out your pastry into a rough circle (about 12 inches).
  3. Assemble: Arrange the pear slices in the center of the pastry, leaving a 2-inch border all around. You can fan them out or just pile them up rustically.
  4. Fold: Gently fold the edges of the pastry over the pears, pleating it as you go. The center should remain open.
  5. Chill: Place the galette (on its parchment) in the fridge for 15 minutes. This helps the pastry stay flaky.
  6. Bake: Preheat oven to 200°C (400°F). Brush the pastry edges with beaten egg. Bake for 25-30 minutes until the pastry is deep golden and the pears are tender.
  7. Glaze: While warm, melt the apricot jam with a splash of water and brush it over the pears for a professional shine.

  • Pear Ripeness: Use pears that are ripe but still hold their shape. If they are too soft, they will turn to mush in the oven.
